Kelley's Paleo Pop Tarts

Here is a fun recipe for kids of all ages.  I don't know about you but pop tarts and toaster strudels were a staple breakfast food in my house growing up.  Only problem is most pop tarts or toaster pastries are full of ingredients I do not want my kids eating.  Below you will find a pop tart recipe that brings the fun of breakfast  together with healthy whole food ingredients.  These don't last long around my house!

1 cup almond flour
1 cup tapioca flour
1/4 cup coconut flour
1 tsp baking soda
1/4 cup maple syrup
1/4 cup culinary coconut milk
1 tsp vanilla extract
3tbsp organic spectrum                                                                                                   Organic jam

Directions:

Preheat oven to 350 degrees.
Mix dry ingredients together then add vanilla, maple syrup, and coconut milk . It will look crumbly the dough ... Now fold in spectrum using two knives as if you were making pie crust. Press into ball then cut ball in half so you can make bottoms then tops for pop tart. Place in refrigerator for 15 minutes.

Between tapioca floured parchment paper roll out dough then score with pizza cutter to make 2-3" squares . Place on parchment lined baking sheet then spoon a tablespoon jam onto middle of bottom crust. Repeat with other dough to make tops. use a fork to press the edges together.

Bake 18-20 minutes until edges are golden. Let sit for 10 minutes once out of oven.
